- Whisk together the soy sauce, sake, oyster sauce, sesame oil, sugar, garlic, and ginger until fully combined for the marinade.

- Pour the marinade over the minced beef and sweet corn in a glass container, mixing until fully combined. Cover and marinate for 30 minutes so the flavors settle in.

- While the beef marinates, prep the cabbage: shred it with a peeler or knife, wash well, and let it drain completely.

- After marinating, add the beef mixture to the glass air fryer container and air fry at 190°C / 375°F for 5 minutes.

- Pull it out, break up the mince, stir well, and return it to the air fryer for another 2.5 minutes.

- Stir again and air fry for a further 2.5 minutes to make sure the beef is cooked through completely.
- Season the cabbage with oil spray and salt. Stir the beef thoroughly, then top with the seasoned cabbage and air fry for a final 3 minutes, until tender.

- Add the cooked rice to the container and mix well so every grain soaks up the sauce.

- Plate the rice and beef, top with a fried egg, scatter over plenty of fresh spring onion, and serve.

Notes
What I tested: I cook this in a Ninja Crispi Pro 6-in-1 Glass Air Fryer using the small glass container, which sits closer to the fan and heating element than the large one. The times in this recipe are for that setup. Other air fryers and deeper containers can cook faster or slower, so start checking a couple of minutes early.

My two glass containers: the small one (left) and the large one (right). Portions: Serves 2 as a generous Asian-style portion. Add extra rice or a second fried egg if you like. Mince options: Pork or chicken mince work too. Make sure they are fully cooked through before adding the cabbage. Nutrition: Estimated per serving using 80/20 minced beef and canned sweet corn. Before adding the rice: Make sure the beef is fully cooked with no pink left (71°C / 160°F if you use a thermometer). Rice: Use freshly cooked rice. Don't leave cooked rice sitting out or keep it for long; refrigerate any leftovers promptly and eat them soon. Mixing tip: Use a silicone or wooden spoon to stir in the basket so you don't scratch the non-stick coating. Egg: Cook the yolk until firm if serving young children, pregnant guests or anyone who prefers it well done.
